Classic Korean soup with Organic Mushrooms

This is one of my new favourite recipes from my daughter-in-law @misscuccicuccicucci and from her mother @sune.choi

A twist on a Classic Korean Soup by adding mushrooms for extra nutrition.

Mushrooms are one of the only vegetables that are not sprayed with harmful pesticides and chemicals in Canada. I find local mushrooms and dry them but the extracts from @organicmushroomsca work extremely well

This is a simple recipe and one can modify it as per individual tastes and preferences.

  • Brown pork chop or chuck steak (a cheaper piece of meat) also I add 2 straps of Bacon.
  • I like cooking with Sesame Seed Oil, but you can use any oil you have.
  • Add the white part of the Green Onions
  • Remove meat from pot when browned.
  • On medium or low heat, add a generous spoonful of Kimchi to the pot.
  • You can simply add Organic Mushrooms extract powders to it. You can use fresh mushrooms or powdered mushrooms that are dried.
  • Add whatever other vegetables you want or whatever is left in the fridge.
  • Cook over medium heat and then add 2 cups of water or broth.
  • For spice, you can add a full teaspoon of Gochujang paste (Hot Pepper Paste)
  • Bring to a boil on Medium then to a Minimum and Simmer for an hour.
  • Cook rice or noodles when ready to eat.
  • Garnish with the green part of the onion.
  • This pot makes enough for one person for a few days.

Recipe – Black Bean Walnut Turkey Tail Burgers

We are happy to share this recipe shared by Tammie Samuel to cook a Black Bean Walnut Burger recipe!

These patties can also be rolled into bean balls to go with your favourite pasta sauce on those meat-free Mondays. The oat flour gives these burgers a satisfying crunchy coating. I enjoy them on their own, drizzled with tahini and topped with organic salsa, and a dark leafy side salad, but you can enjoy these healthy burgers on whole wheat buns, and homemade air-fried potatoes too!

Black Bean Walnut Turkey Tail Burgers ingredients:

1 (19oz) can organic black beans, drained and rinsed

1/2 cup. cooked & packed brown wild rice

1/2 cup. shiitake mushrooms, chopped; stems removed (other mushrooms work fine too)

1 flax egg (which is 1 tbsp. flax meal + 3 tbsp. water, sit for 5 min)

1/4 cup. onion, diced

1/3 cup. raw unsalted walnuts crunched into smaller pieces (I just crunch them in my hands)

1-1/2 tbsp. olive oil

1/2 tbsp. soy sauce

2 tbsp. oat flour

2 tbsp. nutritional yeast

1 tsp. smoked paprika

1/2 tsp. black pepper

1 tsp. onion powder

1 tsp. garlic powder

1/2 tsp. sea salt

1/2 tsp. Turkey Tail Mushroom Powder from Organic Mushrooms Canada

In a large bowl, place the beans and mash lightly with a fork, just until you reach a coarse texture. Add the cooked rice, shiitake mushrooms, flax egg, onion, walnuts, olive oil, soy sauce, oat flour, nutritional yeast, spices, and turkey tail powder.

Form into patties (I find wetting my hands makes it easier to make the burgers, as it will be very sticky). Place burgers on a lightly olive oil-greased baking sheet and bake at 375 for about 20 minutes, or until you see that crispy coating. Flip once. Enjoy!

Recipe – “Shiitake – Walnut – Sweet Potato – Chili”

There is nothing better than a satisfying bowl of homemade chili.

A good source of iron, omega-3 fatty acids, antioxidants, fibre to promote good gut health, potassium, and the big guns of the dish, Shiitake mushrooms! Consuming even small amounts of these mushrooms has been shown to cause a reduction in inflammatory molecules in the bloodstream that block the signal to muscles and tissues. This can be of great help for people with arthritis, gout, migraines, inflammatory bowel conditions, and other irritation issues.

SHIITAKE-WALNUT- SWEET POTATO CHILI

Ingredients:

2 tbsp. olive oil

1 small onion

3 garlic cloves, diced

2 celery ribs, sliced

1/2 red pepper, chopped

1/2 green pepper. chopped

2 cups. shiitake mushrooms, washed, halved & stems removed

1 (19 oz.) can black beans, drained/rinsed

2 (19 oz.) cans of kidney beans, drained/rinsed

1 (156 ml) tomato paste

2 (540 ml) cans diced tomatoes

2/3 cup. can or frozen organic corn

1 cup. mashed sweet potato ( one large sweet potato)

1 cup. raw no salt, walnut pieces

1-1/2 cups. organic vegetable broth (more if you desire a thinner chili – or if you find your chili too thin, you can always add two tbsp. flax meal to thicken it up)

1/2 tsp. sea salt (or to taste)

4-5 tbsp. chili powder (or to taste)

1/2 tbsp. turmeric

1/8 tsp. black pepper

1/2 tsp. cumin, or to taste (I’m a baby when it comes to heat, so adjust to desired taste)

**IF YOU USE NUTRITIONAL YEAST AS A B12  SUPPLEMENT spoon a couple of tbsp. into your serving bowl.

Preparation:

First, wash and scrub the sweet potato, DON’T PEEL keep that nutritious jacket on! Boil until soft. Mash up, set aside.

Now grab a big pot and sauté in olive oil for about 5 minutes on medium-low heat, the onion, garlic, celery, red pepper, green pepper and mushrooms. Then add the beans, tomato paste, diced tomatoes, corn, mashed sweet potato, walnuts and vegetable broth. Stir well to combine. Now add the spices. Stir again to mix well. Cover and simmer on low for about 3 hours. Taste test through the cooking stages to make any cumin or liquid consistency adjustments.

SERVE AS IS, or serve with the options below. *Adding a whole grain like quinoa, or rice makes this vegetarian dish a “complete” protein-packed meal.

-chili topped with 1/2 sliced avocado &  3 tbsp. Greek yogurt

-chili with 2 slices whole wheat sprout bread

-chili with a side bowl of one navel orange segments, to help the body absorb iron

Origin of Turkey Tail

Turkey Tail (Trametes versicolor, or Coriolus versicolor and Polyporus versicolor), also known as the “Cloud Mushroom,” is a type of polypore mushroom that is found all over the world. Turkey Tail mushrooms are indigenous to woodland forests worldwide and have been naturally growing since ancient times. Documented in medical literature as early as the 15th century in China, these mushrooms continue to be harvested from the wild today and are also cultivated on a small scale for medicinal purposes. Much of its historical use originates from ancient China and Japan, where medicinal mushrooms were widely embraced for their healing properties. Turkey Tail was referenced in the earliest written text on medicinal herbs from the Han Dynasty, dating back to around 200 BC. Ancient cultures, particularly in China and Japan, revered this mushroom as a symbol of longevity, prosperity and spiritual well-being. In traditional Chinese medicine, Turkey Tail mushroom was referred to as Yun Zhi, and was believed to confer blessings upon those who consumed it.

The cap of the Turkey Tail mushroom comes in many sizes and has a texture resembling leather, adorned with rings displaying an array of colors including blacks, browns, whites and creams. It tends to grow in layers, with each cap being thin, only a few millimeters thick at most. Often, you will find multiple fruiting bodies clustered together in one spot, creating a striking display. These mushrooms grow in clusters of thin, leathery brackets with colorful zones on top and whitish pores below, typically thriving on logs and stumps of deciduous trees.

What sets Turkey Tail apart are the darker stripes covered in tiny hairs, visible when observed under a dissecting microscope. These minute details help distinguish the Turkey Tail from similar fungi, adding to its uniqueness. Moreover, its texture is notably tough and leathery compared to other fungi, giving it resilience and durability in the wild.

Turkey Tail mushroom stands out as one of the most extensively studied medicinal fungi. Rich in polysaccharides, particularly beta-glucans, it has demonstrated immune-stimulating and anti-tumor properties. Its potent antioxidant qualities contribute to its anticancer effects, akin to various other medicinal mushrooms. Turkey Tail contains polysaccharide-K (PSK), recognized as an approved anticancer medication in Japan. To prepare Organic Mushrooms Hot coffee latte:

Just add the required quantity of coffee powder or a shot of espresso to the same ingredients used for Hot chocolate.

To make the coffee latte, blend the mushroom extract powder, coffee powder, maple syrup, cacao powder (for added flavor), ground cinnamon and sea salt with a bit of milk or hot water for around 30 seconds to 1 minute. Pour the blend into heating dairy-free milk and stir it till you see a froth forming. If you are using a shot of espresso, feel free to add the shot of espresso into the heating milk before adding the blended mixture.

Taste the coffee and adjust the flavor as desired by adding more cinnamon for warmth, additional sweetener for sweetness and/ or more coffee/espresso for a stronger coffee taste.

It is recommended to take 2-3 grams of mushroom extracts as a part of your daily diet.
